Nina’s Pancakes – Recipe of the Month

This wonderful recipe below has been created by my friend Nina Aksnes.

Who loves pancakes?
To eat delicious food that also nourishes your body is a good combination.
I was approached to make a delicious recipe on pancakes. There are so many good recipes, but I felt inspired making a new one. It turned out SOOO good.

Makes 7 pieces.
Ingredients

– 90 g Buckwheat flour (or sifted ancient flour/ almond flour)
– 1 tbsp arrowroot (potential replaced with psyllium husk)
– 1½ tsp baking powder
– ¼ tsp Himalayan salt
– 1 tsp cardamom
– ½ cup coconut milk
– 3 tbsp maple syrup
– 1 tsp apple cider vinegar
– 2 tbsp melted coconut oil

Directions

– Mix all the dry
– Mix all the wet
– Mix the batter until there are no lumps.
– Fry the pancakes in coconut oil. Use one spoonful of batter per pancake.
– Let them fry under a lid, this makes the pancakes even more fluffy.
– When you see the batter on top has solidified, flip it. Fry it on the other side for some seconds, until it`s gotten a nice crust.
– Eat them as they are or with maple syrup, fresh berries, or with your favorite topping.
