Spring Green Soup

  • Fresh spinach
  • Fresh kale
  • Fresh parsnip
  • Carrot
  • Onion

Measure the number of bowls you wish to make and put this number of bowls of water in a soup pan. Bring the water to a simmer and then add your chopped onion, carrot and parsnip. When the stock is ready add big bunches of spinach and kale in equal measures. Let it cook for 10 minutes. Add salt and pepper to taste and then use a hand blender to make the soup smooth and creamy.

Can be served with wholemeal bread.

If you like, you can add a dash of olive, hemp or pumpkin seed oil to your bowl of soup once it has been served and also a sprinkle of parsley. Mmmmm, yummy!
